This is one of the most versatile bread recipes I’ve ever come across. It’s great with any type of stew or soup, but can also be easily paired as a lighter, crispier substitute for garlic bread.
Ingredients:
5-1/4 inch slices of sourdough boule
4 tablespoons chopped fresh parley
2 tablespoons olive oil
2 teaspoons coarse kosher salt
1/2 cup grated parmesan cheese
Directions:
1. Preheat oven (toaster oven if you have one) to 375 degrees.
2. Place bread on baking sheet and brush lightly with olive oil.
3. Sprinkle salt on top of bread.
4. Add chopped parsley on top of bread.
5. Sprinkle parmesan on top of parsley.
6. Place bread in toaster oven and cook until crisp, about 15 minutes.
7. Cut bread into fifths and serve immediately.

Yum! Now I want some pasta so that I have an excuse to make crostini. I almost bought a sourdough boule at Kroger on the manager’s special cart. It would have been so cheap and a tiny bit old, but fixing it this way would have repurposed it and given it new, delicious life! I’ll remember this next time I see it.
